Thanks, Emma,

A couple of weeks ago in the Highlands I had Cullen Skink for the first time in years - absolutely delicious!!!

Brought home plenty Plain Bread and a supply of well fired rolls but sadly I have eaten them all and I can' get them here in the North East (of England).

The local Baker does a good Scotch Pie (alongside Polish bread) so he is quite "international.

Robert, I have never tried Cullen Skink, but just adore Plain Bread.
Some years ago, I used to be able to get it on Derby Market, but have not seen it for years. Oh the old foods. Makes my mouth water.

Rabbie, I haven't had Cullen Skink in years, suppose its cause i
can have it any time I'm out, my daughter in law however has it every
time we are all out for a meal.
As for plain bread, love it with butter and syrup, and had a crispy roll
this morning. You must enjoy every mouth full when back here on a
visit.

Good for you Dizzi, there you go Rabbie quick visit
to tesco for the bread.

Cullen Skink recipe......serves 6 but cut it to suit yourself.

500g nudyed smoked haddock, skin on
knob butter,
1 onion finely chopped,
1 leek cut into chunks,
2 medium potatoes, unpeeled and cut into chunks
500ml whole milk
Chives chopped to serve.

Put fish into a pan large enough to hold and cover with about 300ml
of cold water, bring gently to the boil, fish should be cooked if not give
another minute or so.
Remove from pan set aside to cool take pan off the heat.
Melt the butter in another pan on medium/low heat and add onion and leek.
Cover and allow to sweat without colouring for about 10 mins until soft,
season with black pepper. Add potato and stir to coat with butter, pour
in the haddock cooking liquor and bring to simmer, cook until potato is
tender. Remove skin and bones from haddockand break into flakes.
Lift out a generous slotted spoonful of potatos and leeks and set aside.
Add milk and half the haddock to the pan,mash ruffly or blend until
smoothish. Season to taste and serve with a generous spoonful of the
potato, leek and haddock mixture in each bowl and a sprinkling of chives.
