Left overs....update

Marie, my wording was a bit confusing , so this is what I meant, I have two small plates /dishes, I made a lot of cheese and onion mixture and lined the plates with pastry added the mixture to each the put a pastry lid on the top......heres the way I make it....

One or two onions chopped fine...I put them in a big basin add a teaspoon of sugar and a tiny bit of water, put it in the microwave for 4/5 mns whilst the onions are still warm I grate a lot of cheese in and stir it, the cheese will melt into the onions, then divide between the two plates as above...
bake on a medium heat until cooked to your liking, make less for just one plate, I always do two then freeze one....same thing with the apple tart...no onions though lol...

still need to do the peanut cookies, I am going to cut out the sugar and substitute Splenda, hope it works...

If substituting Splenda for sugar don't forget it has to be done by volume and not by weight. So a tablespoonful of Splenda is equivalent to a tablespoon of sugar but it weighs a lot less.

Thanks Sue the recipe calls for a cup of sugar, so will have to see how many tbsp are in a cup, no use weighing the Splenda its is so light ....

What an intersting thread! I think I'll go and make some banana loaves as I've got quite a few bananas on the turn. Any low calorie suggestions for frozen fruit would be welcomed as I've still got tons of blackcurrant, blackberries and gooseberries. I'm trying to reduce the waistline at the moment so my usual crumbles and sponges are banned!

Add couple of spoonfuls of frozen blackberries or blackcurrant to a ripe banana and blitz in blender for fruit smoothie - full of vitamins!
Any fruit can be used also add plain yogurt if you want it creamier.

Peanut butter is never left over in our house, we have it on toast at breakfast, when we are fed up with the cornflakes, toast and marmalade or toast and honey.

We always laugh at the advert, where it tells you what to do with left overs, you have to buy more ingredients to use it up.

OH always says to me, we never have left overs, because we dont buy too much, eat what we have, and toast stale bread.

If you have any bread leftovers there are a number of things you can do.

I make breadcrumbs and I sometimes freeze any spare crumbs. These can be used to coat croquette potatoes or fish cakes or rissoles.

They can be used as a base for desserts like Queen of Puddings.

If you fry breadcrumbs in butter and sugar until they are golden brown and crispy they can be cooled and stored in an airtight container. These sweet crumbs are nice as toppings on desserts. They make a pleasant pud if layered with stewed apple. That looks pretty in a glass dish too.

Oddments of cake or rather dry trifle sponges can be spread with a nice jam (we like blackcurrant or bramble jelly) and placed in a dish with sliced banana. Cover with a low sugar custard and eat while warm for a rather nicer than usual banana custard.

Bash some broken biscuits in a bowl till crumbed. Add odds and ends of dried fruit like sultanas and glace cherries. Stir in enough melted cooking chocolate so it is all coated and press firmly into a lined tin to set in the fridge. This is even nicer if a bit of butter and some golden syrup is added to the melted choc but that isn't essential. Squares of broken biscuit cake go down well in this house.

Just found two boxes of merangue cases, nobody wants them just as cases any ideas.....Sue I like the ideas you are sharing, I havent done too much cooking, for quite a while,suddenly got the urge again.....I must say I have been on Martin Lewis money site and one of the forums is what you can do with leftovers, so thought I would start it on here....

I have a recipe for apple sauce cake somewhere. It is basically a fruit cake , with apple sauce replacing the fruit, and is quite a moist cake. Always used to go down well, but not made any for a long time, OH prefers scones.

Crush any spare meringues and stir them into any fruit yoghurt or fools.

Or whip cream and chop strawberries. Stir together with crushed meringues and swirl on some strawberry sauce.

Mix crushed meringues with any soft icecream.

Now I know it sounds weird but it really is scrummy.........try banana and cheese on toast!

Toast some bread and butter it then layer on some cheese and put under the grill. Once the cheese has melted, but before it gets brown, cover the cheese in thinnish slices of banana. Pop back under the grill until the banana is cooked and the bits of cheese showing are brown.

When I am on my own and can't be bothered to cook this is a good filling snack. It's great for using up good bits of banana from the banana that is going black in spots.

Just the job,Sue, now my lunch is sorted, another poser for you . I have a large tub of Hazel nut pate spread, dau brought back from the France, its a bit to sweet for my taste, but seems a shame to let it grow fungus,thanks
