	Lynne I have found on the 1881 census a John humphrey born 1871, his father was patrick mcdermott and mother catherine mcdermott, they had six children named mcdermott and three children with the surname Humphrey patrick occupation was a cooper and him and his wife were born in Ireland all the rest were born in Stockport. In 1881 they were living in Preston Lancashire. this sound like the right one but somewhere a long the line his father may have changed his name for some reason. anyway not sure if this helps but good luck.
