Scottish records-meaning??

I have just found my grandmother's death on the Scotlands People site. She was born Lillian Flynn and married a Jack Strock..but in the column 'other surnames' it says Docherty Flynn.
I realise Flynn is her maiden name and presumed she may have remarried and become Lillian Docherty, but then I found the death of her husband Jack Strock and in the 'other names' column it also says Docherty.
I can't work out why they would both have Docherty in their name.
I thought it could be a double barrelled name but they are just registered as Strock, not Docherty-Strock...has anyone any ideea what this coud mean?

Renaming my rellies as per Christina's info:

My gg uncle was the illeg son of Andrew Strock and Elizabeth Docherty.
He was known as Jack Docherty until age 16, when his parents wed. This legitimized him, and he also changed his name to Jack Strock.

I'm thinking this could have happened in your case.
