It will include MMN - if she was legitimate.
Look for the child on the 1841 census….FREE on familysearch or freecen

For earlier Cornish bmds the Cornwall OPC website is very good.
The birth certificate would confirm the parents names.

I don’t think to say the family lied to the enumerator is fair. You don’t know how the numerator asked the question or how he made his notes or read them.
In my own research it is quite clear that the enumerator got very confused over the names of all the children AND entered the very young servant as a child of the family.

Coming a little late to the party (I will private-message Gerald if he doesn't reply here)
I would think there is an excellent chance that William Dungey Truscott's father was a William Dungey.
If the parents weren't married and the father was not named on a birth certificate or baptism record, the father's surname was often given as a middle name. (I had a great-aunt with that name pattern.) Here, the mother's father was Peter, not William, so it's likely that William was the child's father's name.
Possible candidates, from a search at Cornwall GRO site for Dungey baptisms 1830-1845 -- St. Ewe is 5 miles from Tregony, and slightly closer to Cuby.
1831 Ewe, St. William DUNGEY William & Richa 1832 Ewe, St. William DUNGEY Solomon & Mary 1840 Ewe, St. William Henry Allen DUNGEY James & Eleanor
Or, if Maria was working on one of their farms, an older William might have been the father... but given Peter's occupation and likely economic status, she would probably not have been an agricultural labourer or domestic servant.

Also, we have to remember that there was no such thing as legal adoption in England until several decades after William Dungey Truscott was born. If he was brought up by his grandparents, or treated as another child of the family in their home, "son" might have been the easiest way for them to describe the relationship. It was not at all an uncommon situation; these litter my family tree.
Do you know the person who corrected Peter Truscott's surname in the 1861 in 2010?
Where was Maria in 1861 - I'm not seeing her in this thread - ? She married in 1863. Can't find her. She married in Redruth reg district:

Why was this so hard to find? So she was living away from her son and parents:

Farmer, unmarried. Creed to Cuby is 1.5 miles.
Ancestry has the households @$&ed up, as usual. William Dungey is alone in his household; he isn't part of the Julyan household (see below), and he apparently had 40 acres of his own, employing one boy and one man. Next door, we have:

This was an appeal against an order made at the Ruan Highlanes Petty Sessions, by Mr. Gregor and the Rev. S. Symonds, magistrates, by which William Dungey, of the parish of Creed, was adjudged to pay 2s. a week for the maintenance of the illegitimate child of Maria Truscott. I forgot to check "bastardy orders" at Cornwall OPC ... where, some time ago, I found a male ancestor of mine with a couple such orders made against him some 75 years before this one, about 5 km from Ruan High Lanes. One the year before he married my female ancestor, and one the year he married ... not to the same woman. His wife, my 4x grgrmother, then drowned, about halfway between the two places, 25 years later. He remarried ... to a much younger woman who already had a child, and had a few more ... One does wonder. Mr. Hoare by name...
I'll wait a day or two more and then check in with Gerald to see whether he's seen.

Gerald, I know I for one, and I'm probably not the only one, would be interested in knowing whether this information helped you. We couldn't really tell whether WDT's ancestry was a subject you were looking into.
If you are more specific, it's always possible you might get more ideas! :-)
