As has been said, Its the index your looking at and not a certificate, Note these records on the index are transcriptions, transcribed by people/humans some of these index images are far from easy to transcribe and that's not taking into account human error so always best to check the actual image that the transcription was taken from,

What you're looking at on this site is not a certificate. It's a transcription of a record which (if the transcription is correct) gives you the information you need to order the relevant certificate from the GRO. But remember to check the original image. As you have seen mistakes are made.

Buy the 1878 marriage cert.....................get some factual info, instead of guessing.

It's your guessing which has caused your confusion

And, Jude....................no, there is no death recorded for Thomas prior to Sarah's second marriage.

Jude, I think he got the 1844 birth by doing a search on this site. However, there was an error in the transcription which gave the wrong name.
Michael, in your opening post you refer to a certificate. Now you say you don't have one?

Michael - you are not answering any of the questions though.

Where have you got 1844 from for your birth of Thomas? You say you have a birth certificate - do you? If so, who is the father named on this certificate? And the mother?

What is the exact date of birth?

And as has been suggested, if you don't have marriage certificate to Sarah...get it?

1881 Sarah is Head....status certainly doesn't say married...but can't say for sure that she is a widow...

But can anyone find a death for Thomas (irrespective of his age)?

I have checked the actual image for the 1844 birth and it definitely says William,

Never accept a transcription as 100% accurate always checking the image.

Michael the middle name is Hopkin without the s, I don't think the fact that Sarah then married Hopkins is relevant to that middle name at all

There seems to be a transcription error on here and FMP. The transcription says Thomas Todd; but the original image says William Todd. So his name wasn't Thomas; it was William :-)

Sarah E Payne wa omly married to Thomas Todd for about 8 years then she married Charles H Hopkins 1886 and in the 1901 census it shows Thomas Hopkin Todd step son so im thinking that they put Hopkin as his middle name i might be wrong thanks regards confused Michael

Seem odd that his son should be named Thomas (Hopkin) Todd if their is no connection to Thomas (Hopkin) Todd born (1855)

first born are often named after a parent
